Veg cutlet or veg patty is a healthy and easy snack or finger food or appetizer or side dish. Veg Cutlet ( Pan Fried Veg Patties Indian Style) is a combination of lots of vegetables so it’s a healthier choice of food for your family, especially for your kids. Normally people use mashed potato/veggies for cutlets or patties. Here I am introducing you a different method with chopped and stir-fried vegetables, it gives your cutlets a crunchy and delicious taste. It is very important not to overcook vegetables. Overcooking will not only result in the loss of important nutrients, but it will also drain the flavor. For this recipe, you can use your desirable vegetables.
It is a good, easy and healthy tea time Indian snack for vegetable lovers. You can serve them with chutney or sauces. Also, you can use this veg healthy patties as a wholesome burger filling. These cutlets can be baked, deep-fried or shallow fried to suit your taste and preferences, you can get more details from my note and tips area 🙂

Ingredients For Veg Cutlet ( Pan Fried Veg Patties Indian Style)
- Coconut Oil
- 2 tablespoon(for Stir Fry)
- Chopped Ginger
- 2 tablespoon
- Chopped Onion
- 1/2 Cup
- Curry Leaves
- A hand full (Cut into small)
- Chopped Potato
- 2 Cups
- Chopped Carrot
- 1 Cup
- Chopped Beans
- 1 Cup
- Chopped cauliflower
- 1/2 cup
- Chopped Cabbage
- 1/2 Cup
- Turmeric Powder
- 1 teaspoon
- Pepper Powder
- 1 teaspoon
- Garam masala
- 1 teaspoon
- Salt
- to taste
- cornflour
- 4 to 5 tablespoon
- water
- 1/2 cup or making a thin batter
- Bread Crumbs
- 1/2 cup
- Oil
- For deep frying cutlets
How to make Veg Cutlet ( Pan Fried Veg Patties Indian Style) with step by step method pictures.
1. Clean and chop your desirable vegetables. Here I have used ginger, onion, curry leaves, potato, carrot, french beans, cauliflower, and cabbage.
2. Heat 2 tablespoon oil in a pan, place ginger, onion and chopped curry leaves.
3. Fry onion until brown and add chopped potato.
4. Fry well and cook potato until half cook.
5. Add carrot and french beans.
6. Fry and cook until soft.
7. Add chopped Cauliflower and cabbage.
8. Fry and cook until soft.
9. Once vegetables are soft in texture, add turmeric powder (manjalpodi).
10. Add pepper powder (kurumulakupodi).
11 Add garam masala.
12. Add salt to taste accordingly. Mix well.
13. Our veg cutlet mix is ready. keep aside and allow to cool.
13. In a mixing bowl, place corn flour and little water.
14. Make a thin liquid form.
15. Take a small portion of the veg mixture in your hand. make a flat oval-shaped ball.
16. place the ball in the thin cornflour liquid, dip well.
17. place it on the bread crumbs, coat well.
18. Make sure the cutlet is well covered with bread crumbs. Shape it properly and repeat the all process with the remaining veg mixture until done.
19. Heat oil for frying. Place shaped cutlets and fry until both sides golden brown.
20. Serve hot and crispy with sauce or chutney. enjoy!
Notes and Tips
1. If you are health conscious about the oil, you can choose shallow frying with little oil. Also, you can bake the patties in the oven. Place the coated cutlets on an aluminum foil-lined baking tray and place in a pre-heated oven. Bake at 200 degrees for 30 – 35 minutes or until it is golden brown in color.
2. You can make the veg cutlet without potatoes too. Replace potatoes with sweet potatoes for a healthier version.
4. To make veg cutlets in Air Fryer, arrange them in the basket of the air fryer and brush them with oil on both sides. Pop the basket into the air fryer and air fry for 18-20 minutes at 200 degrees.
5. You can freeze the shaped cutlets for 1 month; bring it to room temperature before your frying time.
6. It is very important not to overcook vegetables. Overcooking will not only result in the loss of important nutrients, but it will also drain the flavor.
