Nadan Beef Ularthu (Spicy Beef Fry/Roast Kerala Toddy Shop Style) is a tasty and spicy traditional recipe from Kerala, South India. It is an indispensable dish for Keralites/Malayalees especially Kerala Christians. The Malayalam word “Ularthu” means “stir fry” or “roast”. It is a stir fry or slow roast of beef with a variety of Indian spices, coconut oil, coconut slices and plenty of curry leaves. Ingredients For Beef Ullarthu (Spicy Beef Fry/Roast Kerala Toddy Shop Style)

  • Beef (cubed)
  • 500g
  • Chopped Ginger (To Marinate)
  • 1 Tablespoon
  • Chopped Garlic(To Marinate)
  • 1 Tablespoon
  • Turmeric powder(To Marinate)
  • 1/2 Teasppon
  • Ground Masala powder(To Marinate)
  • 2 Tablespoon (Recipe below)
  • Coconut Oil
  • 2 tablespoon (Adjust)
  • Onion
  • 1 Big(sliced)
  • Coconut Slices(Thenga Kothu)
  • Hand Full (Adjust to taste)
  • Chopped Ginger
  • 1 tablespoon
  • Chopped Garlic
  • 1 tablespoon
  • Green chili
  • 2 (slit)
  • Curry leaves
  • Hand Full
  • cardamom(elakka)

Ingredients For Ground Masala

  • Dry red chili (I used spice less)
  • 8 to 10
  • Coriander seeds
  • 1 tablespoon
  • Whole pepper
  • 1 Teaspoon
  • Fennel seeds
  • 2 Teaspoon
  • Cloves
  • 3
  • Cardamom
  • 2
  • Cinnamon
  • 1 inch
  • Star anise
  • 1


How to make Nadan Beef Ularthu (Spicy Beef Fry/Roast Kerala Toddy Shop Style) in a traditional recipe with step by step method Pictures.

1. Dry roast ingredients to ground masala.

2. Grind and make powder.

3. In a mixing bowl, place beef, ingredients to marinate and salt for beef.

4. Mix well and keep aside next 30 to 45 minutes.

5. Add 1/4 to 1/2 cup water.

6. Cook until soft. (for pressure cooker, 3 to 4 whisiles)

7. In a heavy bottomed pan, heat oil and add coconut slices. Fry Until golden.

8. Add onion, ginger,garlic, green chilli, curry leaves. Fry until brown.

9. Add turmeric, ground masala powders, cardamom, clove, fennel. Mix and saute next few seconds.

10. Add cooked beef along with gravy. Mix well.

11. Add 1/2 teaspoon vinegar for taste.

12. Mix and stir continuously in a medium heat. When it looks dry in texture, add extra black pepper and meat masala powder, stir well. Sprinkle some coconut oil and give it a good stir.

13. When the beef pieces become fry/roast in texture and golden brown/black in color, turn off the heat. Our Beef Ularthu is ready!

14. Serve hot with rice, chappathi, parata, appam, kappa etc. and enjoy 🙂
